🍳 What it is
“Hon-mirin” (true mirin) is a kind of rice wine and contains alcohol. “Mirin-style seasoning” has almost no alcohol and is a different product. In teriyaki and simmered dishes it adds sweetness and shine, and helps food hold its shape.

🔥 How to use
🍗
Teriyaki, simmered dishes
With soy sauce, it makes a sweet-savory flavor
♨️
Cook it
Hon-mirin should be boiled to cook off the alcohol before eating. For uncooked dressings, boil it in a small pan first
🔁 If you don’t have it
For 1 tbsp mirin, use 1 tsp sugar + 1 tbsp water. It will be a little less glossy.
🧊 Storage
Close the cap tightly and store it as the label says.
