How to make it
1
Cut, and mix the sauce
- Peel the onion and slice it lengthwise, about 5 mm wide, on the cutting board
- Cut off the root ends of the green onions and cut finely from the end (thin rounds)
- Cut only the long pieces of pork in half
- After cutting the pork, wash the cutting board, knife and your hands with dish soap
- Mix 2 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake and 1 tbsp sugar in a small bowl (the sauce)
How to tell it's doneEverything is cut, and the sugar in the sauce has dissolved.
2
Cook the pork
- Heat 1/2 tbsp vegetable oil in a frying pan over medium heat
- Spread the pork slices in one at a time, and turn over when browned
How to tell it's doneThe pork is browned on both sides, with no pink parts.
3
Add the onion and sauce
- Add the onion and stir-fry for about 2 minutes until soft
- Add all of the sauce from step 1 and cook for about 1 minute, stirring now and then to coat
How to tell it's doneThe sauce has gone down by about half and thickened, and the meat and onion look shiny. Cut 1 slice of pork: there is no pink inside.
Be carefulIf you cook it too long after adding the sauce, it burns. Turn off the heat once it thickens.
4
Arrange on a plate
- Put 200 g rice in each bowl
- Top with the pork and onion, and pour the sauce left in the pan over
- Top with green onions and 1/2 tsp white sesame seeds each
ReadyThe brown sauce has soaked into the rice, and the meat is shiny.
