How to make it
1
Drain the tofu
- Take the tofu out of the pack and wrap it in paper towels
- Put it on a plate, put another flat plate on top, and leave for 10 minutes (the weight presses out the water)
How to tell it's doneWater has collected on the bottom plate, and the paper towels are damp.
2
Cut and coat with potato starch
- On a cutting board, thinly slice the green onions (2–3 mm wide from the end)
- Put the tofu on a cutting board and cut it into 4 equal pieces (each about 1.5–2 cm thick)
- Spread 2 tbsp potato starch on a tray or plate and coat all sides of the tofu thinly
How to tell it's doneAll sides of the tofu are covered in white starch.
3
Pan-fry both sides until golden
- Put 1 tbsp vegetable oil in a frying pan and heat over medium heat
- Lay the tofu in the pan and cook for about 3 minutes without touching it
- When it's browned, flip it with a spatula and cook the other side for about 3 minutes
How to tell it's doneBoth sides are golden (light brown) and crispy.
Be carefulThe water in the tofu can make the oil splatter. Gently lay it in, starting from the side closest to you and moving away.
4
Coat with the sauce
- In a small dish, mix 1 tbsp soy sauce, 1 tbsp mirin and 1 tbsp sake
- Turn to low heat, pour the sauce around the pan, and add 10 g butter
- Flip the tofu to coat it all over with the sauce
How to tell it's doneThe sauce is bubbling and a little thick, and both sides of the tofu are coated in brown sauce.
Be carefulSoy sauce burns easily. Turn to low heat before adding it.
5
Serve and top with green onions
- Put 2 pieces on each plate and pour the sauce left in the pan over them
- Top with the green onions you cut in step 2
ReadyEat while warm.
