Tofu

A white food made from soybeans. There’s firm “momen” tofu and smooth “kinugoshi” (silken) tofu.

Tofu

👀 At a glance

🧱
Firm (momen)

Holds its shape. For stir-fries, simmering, frying

☁️
Silken (kinugoshi)

Smooth. For chilled tofu, soups, mapo tofu

🔪 Prep (draining)

Wrap it in paper towels and let it sit to draw out water. For stir-fries and pan-frying, draining keeps it from getting watery or falling apart.

🔁 If you don’t have it

You can swap firm and silken. For stir-frying or pan-frying, firm holds together better.

⚠️ Be careful

  • If you have a soy allergy, don’t eat it
  • When eating it uncooked (like chilled tofu), use tofu within its date and keep it cold

🧊 Storage

Keep it in the fridge. Leftovers go in water in the fridge; eat them soon.
