How to make it
1
Soak the wakame, cut the tofu and leek
- Put water in a bowl, add 2 tsp dried wakame, and let sit for 5 min
- Put the tofu on a cutting board and cut it into 2 cm cubes. It is soft, so just bring the knife straight down from top to bottom
- Cut the leek into thin rounds
How to tell it's doneThe wakame has spread out and become soft. Drain it in a strainer.
2
Warm the water and dashi granules
- Put 400 ml water and 1/2 tsp dashi granules in a pot
- Warm it over medium heat
How to tell it's doneSmall bubbles start rising around the edge of the pot.
3
Add the tofu and wakame
- Add the tofu and wakame
- Tofu breaks easily, so do not stir hard with the ladle
How to tell it's doneThe edge is bubbling again, and the tofu is warm all the way through (scoop out one piece and taste it: it is not cold).
4
Turn the heat down and dissolve the miso
- Turn the heat to low first, then put 1 1/2 tbsp miso in a ladle
- Hold the ladle half under the soup and melt the miso into it little by little with chopsticks
- Taste it. If it is too weak, add miso 1/2 tsp at a time
How to tell it's doneNo lumps of miso are left, and the whole soup is the same color.
Be carefulAfter adding the miso, do not let it boil hard. The miso loses its aroma.
5
Turn off the heat, add the leek, and serve
- When the edge starts bubbling, turn off the heat before it boils
- Ladle into bowls and top with the leek
ReadyWhen you reheat it, use low heat only until it bubbles. Do not let it boil.
