How to make it
1
Drain the tofu
- Take the tofu out of the pack, wrap it in paper towels, and put it on a plate
- Put it in the fridge as it is for 10 minutes (silken tofu is soft, so do not put a weight on it)
How to tell it's doneThe paper towel is damp, and a little water has come out onto the plate.
2
Cut the toppings
- On the cutting board, cut the green onions into small rounds (2–3 mm wide from the end)
- On a cutting board, cut the myoga in half lengthwise, put the cut side down, and cut into thin slices from the end
- Cut off the stems of the shiso leaves, stack the 4 leaves, roll them up, and cut into thin strips from the end on the cutting board
How to tell it's doneThe green onions, myoga and shiso are each finely cut and set out separately.
3
Cut the tofu and put it in bowls
- Remove the paper towels and gently put the tofu on the cutting board
- Cut it into 4 pieces with a knife
- Slide the flat side of the knife under the tofu, lift it gently, and put 2 pieces in each of 2 bowls
How to tell it's doneThe tofu pieces sit in the bowls with their corners not broken.
4
Add the 2 kinds of toppings
- 1st piece in each bowl: top with green onions, ginger (1/2 tsp if using tube) and bonito flakes
- 2nd piece in each bowl: top with myoga and shiso
- Right before eating, pour 1 tsp soy sauce over each piece
ReadyEat while the tofu is still cold.
Be carefulIf you pour the soy sauce first and leave it, water comes out of the tofu and the flavor gets weak.

If it didn't work out
The tofu is wateryIt was not drained enough. Next time, let it sit in the fridge for the full 10 minutes.
It broke when putting it in the bowlsYou picked it up with your hands. Next time, move it on the flat side of the knife. It tastes the same even if it breaks.
The flavor is weakWater from the tofu is thinning the soy sauce. Pour out the water in the bowl, then add a little more soy sauce.
