How to make it
1
Cut the vegetables
- Cut the cabbage into 5 cm squares. Slice the hard core thinly
- Cut the onion into 1 cm wide wedges
- Cut off the hard base of the shimeji mushrooms and pull them apart into small clumps with your hands
- On a cutting board, cut the broccoli from the stem into bite-size florets and rinse quickly with water
How to tell it's doneEverything is cut, and only the broccoli is set aside for the finish.
2
Cut the chicken and sprinkle with salt
- Cut the chicken into bite-size pieces (3–4 cm)
- Sprinkle 1/4 tsp salt and a little pepper all over
- When you finish cutting, wash your hands, the knife and the cutting board with dish soap
How to tell it's doneThe chicken is cut and seasoned with salt and pepper, and your hands and tools are washed.
3
Cook the chicken
- Heat 1 tbsp olive oil in a deep pot over medium heat
- Lay the chicken skin side down and cook for 3 minutes
- Flip and cook for 1 minute
How to tell it's doneThe skin is nicely browned. The inside can still be raw (it will cook through when simmered in step 4).
Be carefulThe oil splatters when you add the chicken. Put it in gently and keep your face away.
4
Simmer in tomato soup
- Add the onion and 1 tsp garlic and stir-fry for 1 minute
- Add the whole can of tomatoes, 400 ml water, 4 tsp consommé and 1 tsp sugar
- Add the cabbage and shimeji, put the lid on, and put on medium heat. When it boils, cook on medium-low heat for about 10 minutes. Stir from the bottom now and then
How to tell it's doneThe cabbage is soft. Take out the biggest piece of chicken and cut it open: it is white all the way through, with no pink.
5
Finish with broccoli and cheese
- Add the broccoli, put the lid on, and simmer for 3 minutes
- Taste it. If the flavor is weak, add salt a pinch at a time
- Turn off the heat, scatter the cheese over everything, put the lid on, and leave for 1 minute
ReadyChopsticks go easily into the broccoli, and the cheese has melted.
