1
Cut the tomatoes

- Cut in half lengthwise, then cut each half into 4 wedges (8 pieces from 1 tomato)
How to tell it's doneBoth tomatoes are cut into 8 pieces each.
2
Slice the onion and soak it in water
- Peel the onion and cut it in half lengthwise on a cutting board. Put the cut side down and slice thinly along the lines from top to bottom
- Soak in a bowl of water for 5 minutes

How to tell it's doneThe onion is patted dry. When you eat a piece, the sharp bite isn't strong.
3
Make the dressing
- Put 2 tbsp vinegar, 1 tbsp soy sauce and 1 tsp sugar in a bowl and mix until the sugar dissolves
- Add 1 tbsp vegetable oil and mix
How to tell it's doneWhen you scrape the bottom with a spoon, there's no gritty sugar.
4
Mix and chill
- Add the tomatoes and onion to the bowl of dressing and mix gently with a spoon so the tomatoes don't break
- Cover with plastic wrap and put in the fridge for 15 minutes
- Taste it. If it's too sour, add a pinch of sugar and mix
ReadyJuice has come out of the cut tomatoes and mixed with the dressing. Serve with the juice and eat it the same day.
