How to make it
1
Make the egg mix
- Crack 3 eggs into a bowl, and add 2 tbsp water, 1/4 tsp dashi granules, 2 tsp sugar and a pinch of salt
- Keep the chopsticks touching the bottom of the bowl and move them side to side, cutting through the egg whites as you mix
- Take the 4 crab sticks out of the package and peel off the film if they have any
How to tell it's doneThere are no lumps of egg white, and the sugar has dissolved.
2
Cook the 1st layer and roll it around the crab sticks
- Put 1 tsp vegetable oil in a tamagoyaki pan (or a small frying pan) and heat over medium heat. Spread the oil all over with a paper towel (keep the paper towel)
- Drip a little egg mixture from the tip of the chopsticks. When it sizzles, pour in 1/3 of the egg mixture and spread it all over
- While the top is still half runny, line up the 4 crab sticks sideways on the far side
- With the crab sticks as the center, roll it up from the far side toward you
How to tell it's doneThe crab sticks are wrapped in egg in one log.
Be carefulThe handle and edges of the pan get hot. Do not touch the pan with your other hand.
3
Roll the 2nd and 3rd layers
- Move the rolled egg to the far side, and use the paper towel to spread oil thinly in the empty space (add the other 1 tsp vegetable oil)
- Pour in half of the remaining egg mixture. Lift the rolled egg a little with chopsticks and let the egg mixture flow under it too
- While the top is half runny, roll from the far side toward you
- Do the same once more with all the rest of the egg mixture
How to tell it's doneAll the egg mixture is used up, and the rolled egg is lightly browned on the outside.
4
Shape, cool and cut
- Turn off the heat and press the egg against the far corner of the pan to shape it
- Put it on a cutting board and let sit about 5 minutes to cool a little (cutting it hot makes it fall apart)
- Cut into 6
ReadyThe red of the crab sticks shows in the middle of the cut surface, and the egg has no runny liquid parts. If liquid comes out, cover with plastic wrap and heat in the microwave at 600 W for 20 seconds.

The egg sticksThere was not enough oil, or you poured before the pan was hot. Oil the pan each time and pour after you hear a sizzle.
The crab sticks are not in the middleYou did not line up the crab sticks at the far edge. Line them up neatly on the far side of the 1st layer of egg.
The outside burned brownThe heat is too high. Turn it a little lower than medium, and wait longer to make up for it.
