How to make it
1
Wrap the strawberries in bean paste
- Wash the strawberries, remove the stems, and pat them very dry with paper towels
- Divide the bean paste into 6 (30 g each)
- Flatten the bean paste in your palm, put a strawberry on it, and wrap it. It is OK if the tip of the strawberry shows a little
How to tell it's doneAll 6 strawberries are covered with bean paste.
2
Mix the batter
- Put 100 g shiratamako in a microwave-safe bowl
- Add 130 ml water a little at a time, mixing with a whisk to dissolve it
- Add 20 g sugar and mix
How to tell it's doneThe white liquid is smooth with no lumps you can see.
3
Heat in the microwave
- Cover loosely with plastic wrap and heat at 600 W for 1 minute 30 seconds
- Take it out and mix well with a spatula dipped in water
- Cover with plastic wrap again, heat for 1 minute, and mix well
- If there are still white parts, heat 30 seconds more
How to tell it's doneIt is a little see-through and glossy all over, and stretches a lot when you lift it with the spatula.
Be carefulThe bowl and the dough are very hot. Peel off the plastic wrap starting from the side away from your face.
4
Divide into 6 on potato starch
- Spread 3 tbsp potato starch in a tray (a flat container)
- While it is hot, put the dough on it and sprinkle a little potato starch on top too
- Wet kitchen scissors with water and cut the dough into 6
How to tell it's doneIt is in 6 pieces, each coated with potato starch and not sticking to your hands.
5
Wrap in mochi
- Put potato starch on your hands and spread a piece of dough in your palm to about 8 cm across
- Put a strawberry and bean paste ball from step 1 on it, strawberry tip down
- Wrap it by stretching the edges of the dough, and pinch the seam closed at the bottom
- Put it on a plate seam side down and brush off extra potato starch with your fingers
ReadyNo bean paste shows, and the seam is firmly closed. Eat the same day. Daifuku can easily get stuck in the throat, so cut it into small pieces for small children and older people, and chew well.
Be carefulThe dough is hard to wrap once it cools. Wrap while it is warm but cool enough to touch.
