Beef and Broccoli Oyster Sauce Rice Bowl
Serves 2 · About 20 min
Lean beef round and broccoli stir-fried in an oyster sauce glaze and served over rice. The beef is rubbed with potato starch before cooking, so it stays tender and the sauce clings to it. The broccoli is microwaved first, so the stir-fry only takes a few minutes.

💪 What makes this work for active people
On days you exercise, you need both protein and carbs to fuel your body. A rice bowl gives you both in one dish.
- The numbers: about 31 g protein, about 91 g carbs and about 651 kcal per person. That’s about 180 kcal less than this site’s Gyudon (Beef Bowl) (about 21 g protein, about 826 kcal)
- Lean beef round: less fat and more protein than komagire scraps
- Broccoli: high in protein for a vegetable, and rich in vitamin C
- Not tough: the beef is rubbed with potato starch before cooking. The starch locks in the juices, so it stays tender, and the sauce clings well
- Careful with raw meat: get the vegetables ready first, then handle the meat. Spread the beef out and cook until no red is left
How to make it
1
Microwave the broccoli and cut the onion
- Cut the broccoli into small florets, halving any big ones
- Put them in a microwave-safe bowl with 1 Tbsp water, cover loosely with plastic wrap and microwave at 600 W for 2 min. Drain in a colander
- Cut the onion into 1 cm wide wedges
How to tell it's doneThe broccoli is bright green, and the stems are still a little firm.
Be carefulThe steam under the wrap is hot. Keep your face back and peel it off from the far side.
2
Mix the sauce and season the beef
- In a small bowl, mix 1 1/2 Tbsp oyster sauce, 2 tsp soy sauce, 1 tsp sugar, 1 Tbsp sake, 2 Tbsp water, 1/2 tsp potato starch and 1/2 tsp garlic
- Put the beef in another bowl and rub in 1 tsp sake and 1 tsp potato starch
How to tell it's doneThe starch is worked into all of the beef, with no white powder showing.
Be carefulWash your hands with soap after touching raw meat. Wash the bowl you used for the meat with dish soap before using it for anything else.
3
Stir-fry the beef and onion
- Heat 1 Tbsp sesame oil in a frying pan over medium heat and spread the beef out in it
- Leave it for 1 min, then stir-fry, breaking it apart
- Add the onion and stir-fry for 2 min
How to tell it's doneNo red is left on the beef, and the onion is soft.
Be carefulMeat piled up doesn’t cook evenly. Spread it out.
4
Add the broccoli and sauce
- Add the broccoli and toss briefly
- Stir the sauce again, pour it in and toss to coat
- Turn off the heat once it thickens
How to tell it's doneThe sauce has thickened and everything is glossy.
Be carefulThe starch sinks to the bottom. Stir right before pouring.
5
Serve over rice
- Put rice in the bowls and top with the stir-fry and all its sauce
ReadyThe sauce has soaked into the rice.

If it didn't work out
The beef is toughThe starch wasn’t rubbed in during step 2, or it was overcooked in step 3. Add the onion as soon as the color changes.
The sauce is wateryYou didn’t stir the sauce before adding it in step 4. Stir it first and keep the heat on until it thickens.
The broccoli is too softIt was microwaved too long in step 1. It’s fine if it’s still a little firm (it heats again in step 4).
It’s too saltyOyster sauce is salty. Next time cut the soy sauce to 1 tsp.
