How to make it
1
Cut the ingredients
- Cut the onion into thin slices
- Cut off the hard base of the shimeji and pull them apart into small bunches with your hands
- On the cutting board, cut the chicken into 2 cm cubes
How to tell it's doneAll 3 are cut. Wash the knife and cutting board after cutting the chicken.
2
Make the butter rice
- Put 10 g butter in a frying pan and melt over medium heat
- Add the chicken and stir-fry. When it changes color, add the onion and shimeji and stir-fry more
- Add all the rice, 1/2 tsp consomme, 1/4 tsp salt and a pinch of pepper and mix, breaking up the rice
- Divide between 2 heatproof dishes (gratin dishes)
How to tell it's doneCut the biggest piece of chicken: it is white inside, not pink. The ingredients are mixed into the rice.
3
Make the white sauce
- Without washing the pan, add 20 g butter and melt over low heat
- Add 2 tbsp flour and stir-fry for 1 minute, mixing with a spatula
- Add 300 ml milk in 3 parts. After each part, mix well until smooth before adding the next
- Add 1/2 tsp consomme and simmer over medium heat, stirring
How to tell it's doneWhen you stir with the spatula, it becomes thick and heavy, and the spatula leaves a trail for a moment.
Be carefulIf you add the milk all at once, the flour forms small lumps. Add a little at a time and mix each time.
4
Top with cheese and bake
- Pour half the white sauce over each dish of butter rice from step 2
- Spread 60 g pizza cheese over the top, half on each
- Bake in the toaster oven for about 10 minutes
- When taking them out, hold them with oven mitts or a dry cloth. The dishes are very hot
ReadyThe cheese is melted and has golden brown spots here and there.
Be carefulIf the top looks like it will turn black before browning, cover it with aluminum foil.
