How to make it
1
Cut, and season the pork
- On the cutting board, cut off the root ends of the garlic chives and cut into about 4 cm lengths
- Put the bean sprouts in a strainer, rinse with water and drain well
- Put the pork, 1 tsp sake, 1 tsp soy sauce and 1 tsp potato starch in a bowl and rub in by hand
How to tell it's doneThe bean sprouts are well drained, and you can't see the starch on the meat anymore.
2
Mix the seasonings first
- Mix 1 tbsp oyster sauce, 1 tsp soy sauce, 1 tbsp sake, 1/2 tsp garlic and a pinch of pepper in a small bowl
How to tell it's doneIt's all mixed to the same brown color. Once you start stir-frying you can't stop, so make this first.
3
Stir-fry the pork
- Heat 1 tbsp sesame oil in a frying pan over medium heat
- Spread the pork in the pan and stir-fry while breaking it apart with a spatula
How to tell it's doneThe pink color of the meat is gone. Cut the biggest piece: there is no pink inside.
4
Add the bean sprouts and stir-fry
- Turn to high heat and add the bean sprouts
- Stir-fry, mixing in big motions with a spatula
How to tell it's doneThe bean sprouts are a little see-through but still crisp.
5
Add the garlic chives and seasonings to finish
- Add the garlic chives and pour the seasonings from step 2 around the pan
- Quickly mix everything, and turn off the heat as soon as the garlic chives are soft
- Taste it. If the flavor is weak, add a little soy sauce
ReadyThe garlic chives are soft but still bright green. Put on plates.
Be carefulIf you stir-fry too long here, water comes out of the bean sprouts and garlic chives and the flavor gets weak. Stop at 30 seconds.
