How to make it
1
Hard-boil the eggs
- Take 4 eggs out of the fridge
- Put 1 L water in a pot and bring to a boil over medium heat
- When it boils, put the eggs one at a time on a ladle and gently lower them to the bottom of the pot
- Boil 12 minutes at a steady simmer. For the first 2 minutes, roll the eggs now and then with cooking chopsticks
How to tell it's done12 minutes on the timer. Go to step 2 right away.
Be carefulIf you drop the eggs, the shells crack. Lower them gently with a ladle. The water splashes, so keep your face away.
2
Chill and peel
- Take the eggs out with a ladle and cool in a bowl of cold water for 5 minutes
- Tap each egg lightly on the counter to crack the whole shell, and peel it in the water
- Pat dry with paper towels
How to tell it's doneAll the shell and thin skin are off. Cut 1 egg in half on the cutting board and check that the yolk is set all the way to the center (no runny parts).
3
Mash and mix the eggs
- Put the eggs in a bowl and mash with a fork until the whites are in pieces about 5 mm
- Add 3 tbsp mayonnaise, 1/4 tsp salt and a little pepper, and mix
- Lick a little to taste. If it is too mild, add a pinch of salt
How to tell it's doneThe yolks and mayonnaise are blended and light yellow all over, with bits of white showing.
4
Butter the bread and fill
- Take 10 g butter out of the fridge early to soften
- Lay 4 slices of bread on the cutting board and spread butter thinly on one side of each
- Put half the egg on the buttered side of 2 slices and spread it flat to 1 cm from the edges
- Cover with the other slices, buttered side down, and press lightly with your palm
- Wrap each sandwich in plastic wrap and let sit 5 minutes (the bread and egg settle together and are easier to cut)
How to tell it's doneWhen you press on top of the plastic wrap, no egg squeezes out of the edges.
5
Cut
- Unwrap and put on the cutting board
- Move the knife back and forth like a saw and cut corner to corner twice to make 4 triangles (do not squash it)
- Arrange on a plate with the cut sides up
ReadyYellow egg shows at the cut edge, and the bread is not squashed. Eat on the same day you make it.

If it didn't work out
The yolk is not setNot boiled long enough, or the water was not boiling enough. Next time, keep it at a steady simmer and time 12 minutes with a timer.
The shell is hard to peelNot cooled long enough. Peeling in water lets water get between the shell and the white, so it comes off more easily.
The bread is soggyNo butter was spread, or the eggs were too wet. Pat the peeled eggs dry well and spread butter over the whole surface.
The egg squeezes out when you cutThe egg was spread all the way to the edges. Next time, stop 1 cm from the edge, and let it sit in plastic wrap before cutting.
