How to make it
1
Boil the azuki beans
- Put the azuki beans in a colander and rinse with water
- Put the azuki beans and 500 ml water in a pot over high heat
- When it boils, boil 2 min, drain in a colander and throw away the water (to remove the harsh taste)
- Put the beans back in the pot, add 600 ml water, and turn to high heat. When it boils, turn to medium-low heat and boil about 20 min
How to tell it's doneWhen you pinch a bean with your fingers, it's firm but squashes if you press a little (it's OK if it's still a little firm; it gets softer in the rice cooker).
Be carefulIf the water goes down and the beans stick out of the water, add a little water.
2
Separate the cooking water and beans
- Put a colander over a bowl and pour in the contents of the pot to separate the cooking water and beans
- Don't throw away the cooking water. Let it cool until you can touch it
- Scoop up the cooking water with a ladle and pour it back from up high, about 10 times. This makes the red color deeper
How to tell it's doneThe cooking water is reddish purple and isn't hot when you touch it.
3
Wash the sticky rice
- Measure 2 rice cooker cups of sticky rice with the measuring cup and put it in a bowl
- Add water, stir lightly, and pour the water out right away
- Gently stir with your hand about 20 times, then add water and pour it out. Repeat this 3 times
How to tell it's doneWhen you add water, it's cloudy but you can faintly see the rice underneath.
4
Soak in the cooking water and cook
- Drain the sticky rice in a colander and put it in the rice cooker bowl
- Measure 330 ml of the cooking water from step 2 and add it (if there's not enough, add water. Don't use leftover cooking water) (if your rice cooker bowl has an "okowa" line, fill to its 2-cup line)
- Add 1/2 tsp salt, mix, and let sit 1 hr
- Spread the beans on top (don't mix) and cook
How to tell it's doneThe 'done' sound plays.
Be carefulIf you fill water to the 2-cup line for regular white rice, the sticky rice will be mushy. Measure 330 ml.
5
Mix and sprinkle with sesame salt
- When it finishes, leave it 10 min without opening the lid (to steam)
- Wet the rice paddle and mix gently, turning the rice over in big scoops from the bottom
- In a small plate, mix 1 tsp toasted black sesame seeds and 1/4 tsp salt to make sesame salt
- Serve in rice bowls and sprinkle with sesame salt
ReadyIt's light reddish purple all over, and the sticky rice is chewy.
