How to make it
1
Boil water
- Put 1 L water in a pot with a lid and bring to a boil over high heat
- Take 2 eggs out of the fridge
How to tell it's doneBig bubbles are coming up from the bottom of the pot.
2
Add water and turn off the heat
- When it boils, turn off the heat
- Right away, add 200 ml water (this lowers the water temperature a little)
How to tell it's doneThe heat is off and you've added the water.
3
Put in the eggs, cover and let sit
- Put an egg on a ladle and gently lower it into the hot water
- Cover and let sit for 12 min without turning the heat on
How to tell it's doneThe timer went off at 12 min. Go to the next step right away.
Be carefulIn a small pot or with less water, the water cools too fast and the eggs won't set. Measure 1 L and 200 ml of water.
4
Cool, crack into a bowl, and add sauce
- Take out the eggs with a ladle and put them in a bowl of water for 2 min to cool
- In a small bowl, mix 2 tsp mentsuyu and 2 tbsp water
- Crack an egg over the bowl. Gently let the inside drop from the shell into the bowl
ReadyThe white is cloudy white and softly set, and the yolk is round and soft. If the white is clear and watery, put the egg back in the hot water in its shell for 2–3 min more (next time, let it sit longer). Eat right after making. For small children, older people, or anyone who is sick, make hard-boiled eggs instead of onsen tamago.
