How to make it
1
Cook the salmon
- Put 1/2 tsp vegetable oil in a frying pan and spread it all over with a paper towel
- Put the salmon in skin side down and set over medium heat
- Put the lid on and cook 3–4 min. When browned, turn over
- Put the lid on and cook 3–4 min more
How to tell it's doneBreak open the thickest part with chopsticks: it is a pale, whitish pink all the way through. If any see-through dark red is left, cook 1–2 more min.
Be carefulFat may splatter from the skin. Do not leave the stove while it cooks.
2
Flake the salmon
- Move the cooked salmon to a plate and let it cool a little
- Remove the skin and bones with chopsticks
- Flake the flesh into pieces of about 1 cm with chopsticks
How to tell it's doneThe flesh is flaked, and no bones are left (feel with your fingers to check).
3
Make the tea
- Put 2 tea bags in a teapot or pot
- Pour in 400 ml boiling water, wait 1–2 min, and take out the tea bags
How to tell it's doneThe tea is a light yellow-green.
Be carefulHold the pot by the handle when pouring, so the boiling water does not burn you.
4
Serve and pour on the tea
- Put half the rice into each of 2 rice bowls
- Put half the flaked salmon on each
- Tear the nori into small pieces with your hands and put them on top, then sprinkle half the white toasted sesame seeds on each
- Add a little wasabi if you like
- Gently pour 200 ml of tea into each bowl from the edge of the rice
ReadyThe tea comes up to near the top of the rice. It is hot, so let it cool a little as you eat.

If it didn't work out
The flavor is weakThe salmon is not salty enough. Sprinkle on salt a pinch at a time, and taste each time.
Too saltyThe salmon was the extra-salty kind. Add a little tea to thin it out. Next time, buy fillets labeled "lightly salted" (amajio).
Bones poke you in the mouthWhen flaking in step 2, feel with your fingers and remove bones as you go.
The inside of the salmon is redIt did not cook long enough in step 1. Heat in the microwave (600 W) 30 sec at a time, and check that the color has changed all the way through.
