Simmered Hamburg Steak
Serves 2 · About 50 min

How to make it
1
Stir-fry the onion and let cool
- On the cutting board, finely chop the onion (cut it in half lengthwise, put it cut side down and chop finely)
- Cut off the hard base of the shimeji and pull them apart into small bunches with your hands
- Put 1 tsp vegetable oil in a frying pan, heat over medium heat, and stir-fry the onion for 3 min
- Spread it on a plate and let it cool until it no longer feels warm when you touch it
How to tell it's doneThe onion is see-through and soft, and not hot when you touch it.
Be carefulIf you mix it into the meat while hot, the fat in the meat melts and the patties fall apart easily.
2
Mix the meat mixture
- Put 4 tbsp panko (bread crumbs) and 3 tbsp milk in a bowl and mix to moisten
- Add 250 g ground meat, 1/4 tsp salt and a pinch of pepper, and mix well with your hands for 1 min
- Add 1 egg and the onion from step 1 and mix some more
How to tell it's doneIt is whitish all over and sticky enough to stick to your hands.
3
Shape the patties
- Divide the meat mixture into 2 equal parts
- Take one part at a time and toss it between your hands about 10 times to get the air out
- Shape into ovals about 2 cm thick and press a light dent in the middle with your fingers
- When they are shaped, wash your hands with soap
How to tell it's doneThere are no cracks on the surface, and the middle is dented a little.
4
Cook both sides
- Put the rest of the vegetable oil (1/2 tbsp) in a frying pan and heat over medium heat
- Add the patties and cook 2–3 min without touching
- When browned, turn over with a spatula and cook the other side 2 min (it is OK if the inside is still raw)
How to tell it's doneBoth sides are dark brown.
Be carefulThe fat from the meat splatters. Do not lean over the pan.
5
Simmer in the sauce
- Put the shimeji in the empty space in the frying pan
- Add 150 ml water, 4 tbsp ketchup, 3 tbsp Worcestershire sauce and 1 tsp sugar and mix
- Put the lid on and simmer over low heat for 10–12 min. Turn the patties over once halfway and spoon sauce over them
- Right before turning off the heat, add 10 g butter and let it melt
How to tell it's doneStick a bamboo skewer into the center of a patty: the juice that comes out is clear (not red). Cut one in half: no pink inside. The sauce is a little thick.
Be carefulIf the sauce boils down and looks like it will burn, add water 2 tbsp at a time.
