How to make it
1
Mix the batter
- Crack 1 egg into a bowl and beat well with a whisk
- Add 50 ml milk, 1 tbsp vegetable oil and 1 tbsp sugar and mix
- Add 100 g pancake mix and mix until you cannot see any dry flour. Do not overmix
How to tell it's doneThere are no lumps of flour, and it drips off a ladle thickly.
2
Pour into the mugs
- Rub a thin layer of vegetable oil (not from the list above) on the inside of the mugs with your finger
- Divide the batter equally between the 2 mugs
How to tell it's doneThe batter comes up to halfway up the mug. Any more and it will puff up and overflow.
3
Heat in the microwave
- Cover 1 mug loosely with plastic wrap (do not seal it tight)
- Heat at 600 W for 1 min 30 sec
- Heat the other one the same way
How to tell it's doneThe batter has puffed up close to the rim of the mug, and the top is dry.
Be carefulIf you heat both together, about 2 min 30 sec is a guide. For 500 W, use 1.2 times the time.
Be carefulThe mug is very hot. Use oven mitts or a dry towel to take it out. Peel the plastic wrap from the far side, and keep your face away from the steam.

Check with a bamboo skewer
- Stick a bamboo skewer into the center and pull it out
- If batter sticks to it, cover with plastic wrap and heat 10 sec at a time more
- Let cool a little, then eat it from the mug, or run a knife around the edge and take it out
ReadyNo batter sticks to the skewer. It is fluffy and springs back slowly when you press it with a finger. Eat while warm.
