How to make it
1
Mix the egg and milk
- Crack 1 egg into a bowl and beat well with a whisk
- Add 100 ml milk and mix
How to tell it's doneThere are no lumps of egg white, and it is the same light yellow all over.
2
Mix in the pancake mix
- Add all 150 g of pancake mix
- Stir around with the whisk about 15–20 times. Do not overmix
How to tell it's doneNo dry powder is left, with just a few small lumps.
Be carefulIf you overmix, they will not rise and will be tough. Small lumps disappear when cooked, so do not worry about them.
3
Even out the heat of the pan
- Put 1 tsp vegetable oil in a frying pan and spread it thinly all over with a paper towel (wipe off extra oil)
- Heat over medium heat for 1 minute
- Turn off the heat and set the bottom of the pan on the wet cloth for 3 seconds (it will sizzle)
How to tell it's doneYou hear a sizzle, and the heat across the bottom of the pan evens out.
Be carefulHold the pan handle firmly. Steam rises from the cloth, so keep your face and hands away.
4
Cook one at a time
- Put the pan back on the stove and turn to low heat
- Drop 1 ladleful of batter (1/4 of it, for 1 pancake) into the center from about 10 cm up. It spreads into a circle on its own
- Cook about 3 minutes. When bubbles pop and leave holes on top and the edges start to dry, flip it with a spatula
- Cook the other side about 2 minutes
- From the 2nd pancake on, do not use the wet cloth from step 3. Keep cooking over low heat
How to tell it's doneBoth sides are golden brown. When you poke a bamboo skewer into the center and pull it out, no gooey batter sticks to it.
Be carefulIf batter sticks to it, keep it flipped and cook more over low heat, 30 seconds at a time.
5
Arrange on a plate
- Stack 2 pancakes on each plate
- If you like, top with 10 g butter and pour honey over
ReadyThey are fluffy and thick, and soft all the way through when you cut them.

If it didn't work out
Burnt outside, raw insideThe heat was too high. Cook over low heat and wait until bubbles leave holes on top before flipping.
The browning is patchyThe heat of the pan was uneven. Cool it once on the wet cloth in step 3 before cooking. Wipe the oil so it is thin.
They did not rise and are toughYou overmixed in step 2. Stop at 15–20 times, and it is OK to leave small lumps.
They are not round and the shape is unevenYou moved while pouring the batter. Drop it all in one spot from about 10 cm up.
They are pale and do not brownThe heat is too low, or there is too much oil. Wipe the oil with a paper towel, and after watching how the 1st one cooks, turn the heat up just a little.
