How to make it
1
Pat dry and dust with flour
- Sandwich the scallops between paper towels and pat them very dry
- Cut 1 green onion into 3 mm pieces on the cutting board
- Sprinkle a pinch of salt on both sides of the scallops, then dust thinly with 2 tsp flour using a tea strainer or a spoon
How to tell it's doneThe scallops are not wet on the surface and have a light coat of white flour.
2
Fry one side
- Heat 1 tsp vegetable oil in a frying pan over medium heat
- Put in the scallops and cook without touching them for 2 minutes
How to tell it's doneWhen you lift the edge of a scallop a little with cooking chopsticks, the bottom is nicely browned.
Be carefulOil can pop and splatter from the scallops, so keep your face away.
3
Flip and coat with butter and soy sauce
- Flip the scallops and cook for 1 minute
- Turn to low heat, add 10 g butter, and when it melts, pour in 2 tsp soy sauce around the pan
- Shake the pan to coat the scallops, then turn off the heat
How to tell it's doneBoth sides are browned, and from the side they look white and not see-through all the way up the sides. Cut the biggest one in half: if it is white all the way to the center, it is cooked through. If it is still see-through, cook 30 seconds more at a time.
Be carefulSoy sauce burns easily once added. Turn to low heat before adding it, and turn off the heat right away.
4
Arrange on a plate
- Put on a plate and pour the butter soy sauce left in the pan over the scallops
- Sprinkle with green onions
ReadyEat while warm.
