How to make it
1
Melt the kanten
- Take 400 ml milk out of the fridge ahead of time (if it is too cold, it gets lumpy)
- Put 200 ml water and 4 g powdered kanten in a pot, stir with a spatula, then put over medium heat
- When it boils, turn to low heat and simmer 2 minutes, stirring
How to tell it's doneYou cannot see any kanten grains, and the liquid is clear.
Be carefulIf you cut short the 2 minutes after boiling, it will not set.
2
Mix in the sugar and milk
- Add 50 g sugar and stir to dissolve
- Add the milk little by little in about 3 parts, stirring each time
- Stir on low heat, and turn off the heat when small bubbles appear at the edge of the pot (do not let it boil)
How to tell it's doneIt is all white and smooth, with no kanten bits or lumps.
Be carefulIf it boils, a skin forms on top or it boils over.
3
Pour into a container and chill
- Wet the inside of the container with water
- If using canned mandarin oranges, drain them in a colander and lay them on the bottom of the container
- Pour in step 2 gently, and skim the bubbles off the top with a spoon
- Let sit at room temperature for 30 minutes, then chill in the fridge for 1 hour
How to tell it's doneThe top does not move when you tilt the container a little.
Be carefulStep 2 is hot. When pouring into the container, hold the pot handle firmly and pour slowly.
4
Cut
- Run a knife all the way around the inside edge of the container
- Turn the container upside down on a cutting board to take it out
- Cut into 8 pieces and put on plates
ReadyThe cut sides are smooth and slick. Keep in the fridge and eat within about 2 days.
