How to make it
1
Cut the ingredients
- Cut the onion in half lengthwise, then slice thinly, 5 mm wide
- Cut the chicken into 2 cm cubes. Wash the cutting board and knife you used for the meat with dish soap
How to tell it's doneThe onion and chicken are cut and set on separate plates.
2
Boil the macaroni
- Put 1 L water and 1 tsp salt in a pot and bring to a boil on high heat
- Add 60 g macaroni and stir once. Turn to medium heat so it does not boil over
- Boil for 1 minute less than the time on the bag, then drain in a colander
How to tell it's doneWhen you bite 1 piece, the center is still just a little firm (it softens later when baked).
Be carefulWhen pouring the water into the colander, the steam comes up at your face. Hold the pot with both hands and tip it slowly toward the sink.
3
Stir-fry the chicken and onion
- Melt 30 g butter in a frying pan over medium heat
- Add the chicken and stir-fry 3 minutes, turning now and then
- Add the onion and stir-fry 2 minutes until soft
How to tell it's doneCut the biggest piece of chicken: the inside is white, not pink. The onion is soft.
Be carefulButter burns and turns black fast on high heat. Keep the heat no higher than medium.
4
Make the white sauce
- Turn to medium-low heat and sprinkle 3 tbsp cake flour over everything
- Stir-fry with a spatula for 1 minute until the raw flour taste is gone
- Add 400 ml milk in 3–4 parts. Mix well each time, and add the next part once it is smooth
- When all of it is in, simmer 3–4 minutes, stirring the bottom
- Add 1/3 tsp salt and a pinch of pepper. Taste it, and if bland, add a pinch of salt
- Add the macaroni from step 2, mix, and turn off the heat
How to tell it's doneIt is thick enough that a line stays for a moment when you run the spatula across the bottom.
Be carefulIf you add all the milk at once, the flour turns into lumps. Add a little at a time and mix each time.
5
Top with cheese and bake in the toaster oven
- Put step 4 in the heatproof dish and smooth the top
- Scatter 40 g shredded pizza cheese all over
- Bake in the toaster oven for about 10 minutes. If it looks like it will burn partway, lay aluminum foil on top
- The dish is very hot. Take it out with dry oven mitts or a thick cloth
ReadyThe cheese has melted with brown spots here and there, and the sauce is bubbling at the edges.
Be carefulIf you hold it with a wet cloth, the heat goes straight to your hand and burns you.

If it didn't work out
The sauce has lumps (flour lumps)You added the milk too fast in step 4. Turn off the heat and whisk hard with a whisk; most lumps will go away.
The sauce is runnyThe simmering time in step 4 was short. Simmer 2–3 minutes more on medium-low heat, stirring.
The macaroni is too softBoiled too long in step 2. Next time, boil 1 minute less than the bag says.
It doesn't brownThe toaster oven is not hot enough. Add 2–3 minutes at a time, watching closely.
