How to make it
1
Cut the potatoes
- Wash the potatoes well and peel. If there are any sprouts (dimples) or green parts, dig them out with the corner of the knife
- Cut in half lengthwise, lay cut side down, and slice into half-moons 1 cm thick
- Soak in a bowl of water for 3 minutes, then drain in a colander
How to tell it's doneAll the slices are about the same thickness, and no sprouts or green parts are left.
Be carefulPotatoes roll easily. After cutting in half, lay the cut side down before slicing.
Be carefulSprouts and green parts have something in them that is bad for your body. Always remove them.
2
Heat in the microwave
- Put the potatoes in a heatproof bowl and sprinkle with 1 tbsp water
- Cover loosely with plastic wrap and heat in the microwave at 600 W for 5 minutes
- Poke a bamboo skewer (or chopstick) into the biggest piece. If still hard, heat 1 minute more at a time
- Drain in a colander and pat dry with paper towels
How to tell it's doneA bamboo skewer slides in easily. The outside has not fallen apart.
Be carefulThe bowl is very hot when it comes out of the microwave. Use pot holders to take it out.
Be carefulHot steam is trapped under the plastic wrap. Peel it back gently, starting from the far side.

Cut the onion and bacon
- Cut these while the potatoes are in the microwave
- Cut the onion in half from top to bottom, then into 5 mm thin slices
- Cut the bacon into sticks 1 cm wide
How to tell it's doneThe onion is separated into loose pieces.
4
Stir-fry the bacon and onion
- Put 1 tbsp olive oil and the bacon in a frying pan over medium heat and stir-fry 1 minute
- Add the onion and 1/2 tsp garlic and stir-fry 2 minutes
How to tell it's doneFat has come out of the bacon, and the onion is soft and turning see-through.
Be carefulGarlic burns easily. Once you add it, keep stirring.
5
Fry the potatoes
- Add the potatoes and spread them out over the whole pan
- Fry 2 minutes without touching
- When they are browned, turn them over in big scoops with a spatula and fry 2 minutes more
How to tell it's doneBoth sides of the potatoes have golden brown spots here and there.
Be carefulIf you stir many times with chopsticks, the potatoes break. Turn them only 1–2 times.
6
Season
- Sprinkle with 1/4 tsp salt and a pinch of black pepper, and toss 1–2 times
- Taste it. If bland, add a pinch of salt (the bacon is salty, so do not add too much)
- Put on a plate, and sprinkle with dried parsley if you like
ReadyThe potatoes are nicely browned, and when you eat one it is fluffy all the way through.

If it didn't work out
The potatoes broke into mushThey got too soft in the microwave, or you stirred a lot in step 5. Next time, stop when a bamboo skewer just barely goes in, and turn them only 1–2 times when frying.
It doesn't brownThe potatoes were still wet, or you moved them right away. Next time, pat them dry with paper towels and fry 2 minutes without touching.
The potatoes are hard insideNot heated enough in step 2. Put a lid on the pan and steam-fry on low heat for 2–3 minutes. Next time, microwave until a bamboo skewer goes in.
Too saltyThe salt added on top of the salty bacon. Next time, add half the salt, taste, then add more.
OilyToo much fat came out of the bacon. Next time, if a lot of fat comes out in step 4, soak some up with a paper towel.
