How to make it
1
Mix the eggs and sugar
- Crack 2 eggs into a bowl
- Add 60 g sugar and 1 tbsp honey
- Mix with a whisk until the sugar is no longer gritty
How to tell it's doneIt's all a pale yellow, and you can't see any sugar grains.
2
Mix in the flour and rest
- Sift 100 g flour and 1/2 tsp baking powder through a strainer into the bowl from step 1
- Stir round and round with the whisk. When no flour is visible, add 2 tbsp water and mix
- Cover with plastic wrap and let sit 10 minutes
How to tell it's doneWhen you scoop it with a ladle and let it fall, it falls in a thick line and spreads flat right away. If it doesn't fall and stays in a lump, add 1 tbsp water.
3
Cook the pancakes
- Put 1 tsp vegetable oil in a frying pan, spread it thinly all over with a paper towel and wipe it off
- Heat over medium-low heat for 1 minute
- Scoop 2 tbsp of batter and drop it from high up onto one spot to make a circle 8–9 cm across
- When little holes appear on top and the edges look dry, flip it (about 2 minutes)
- Cook the other side for 30 seconds, take it out onto a plate, and cover with plastic wrap so it doesn't dry out
- From the 2nd one on, wipe the pan once with the oily paper towel before cooking. Cook 8 pancakes
How to tell it's doneThe top is evenly brown. When you lightly press the center with your finger, it springs back and no batter sticks to your finger (it's cooked through).
Be carefulToo much oil makes the color blotchy. If it's burning, turn the heat down.
4
Fill with bean paste
- Wait until the pancakes are cool enough to touch
- With the darker side facing out, put 50 g red bean paste on 1 pancake, piled higher in the middle
- Put another pancake on top and press the edges gently
ReadyFrom the side, the middle is puffed up and the edges of the pancakes stick together.
