How to make it
1
Cut the fillings
- Peel the carrot and cut it into rounds 5 mm thick
- Cut off the root end of the komatsuna, wash in water, and cut into 4 cm lengths
- Take the kamaboko off its board and cut 4 slices 1 cm thick
- Last, cut the chicken into 2 cm cubes (cut raw meat after the vegetables and kamaboko)
- When you finish cutting, wash your hands, the knife and the cutting board with dish soap
How to tell it's doneEverything is cut, and you've washed your hands, the cutting board and the knife after touching the chicken.
2
Simmer the chicken and carrot
- Put 600 ml water, 1 1/2 tsp dashi granules, 1 tbsp sake, the chicken and the carrot in a pot over medium heat
- When it boils, skim off the whitish foam (scum) with a ladle and throw it away
- Turn to medium-low heat and simmer about 7 min
How to tell it's doneCut open the biggest piece of chicken: the inside is white, not pink. A bamboo skewer goes easily into the carrot.
3
Season and add komatsuna
- Add 2 tsp soy sauce and 1/3 tsp salt
- Add the komatsuna and kamaboko, simmer 1 min, and turn off the heat
- Taste it. If the flavor is weak, add a pinch of salt
How to tell it's doneThe komatsuna stems are soft and bright green.
4
Toast the mochi
- Line the toaster oven rack with aluminum foil and put 4 mochi on it with space between them (they stick together when they puff up)
- Toast 6–8 min. Check on them partway through
How to tell it's doneThe mochi puff up and are lightly browned on the surface.
Be carefulFreshly toasted mochi and the inside of the toaster are very hot. Take them out with chopsticks or tongs.
5
Serve in soup bowls
- Reheat the soup over low heat
- Put 2 toasted mochi in each soup bowl
- Add the chicken, carrot, komatsuna and kamaboko, and pour in the hot soup
ReadyThe mochi has soaked up the soup and is soft on the surface.
Be carefulMochi can easily get stuck in your throat. Take small bites and chew well. Cut it into small pieces before serving to children or older people.

The flavor is weakThere was not enough salt. Add a pinch at a time, tasting each time.
