How to make it
1
Prep (trim the caps and rub with salt)
- Quickly rinse the okra in water
- On the cutting board, cut a little off the tips of the stems. Thinly peel off the hard part around the stem (the cap) with a knife, all the way around
- Line up the okra on the cutting board, sprinkle with 1/2 tsp salt, and roll them while pressing lightly with your palm
How to tell it's doneThe fuzz on the surface (tiny hairs) is gone, and they do not feel prickly.
2
Boil quickly
- Put 1 L water in a pot and bring to a boil over high heat
- Add the okra with the salt still on and boil for 1 min 30 sec
How to tell it's doneThe okra turns bright green.
Be carefulIf you boil too long, the color gets dull and they get too soft. Time it.
3
Chill and cut
- Fill a bowl with water
- Drain the okra in a colander in the sink (careful not to get burned by the steam), and put them right away in the bowl of water to cool
- When cool, pat dry and cut 1 cm wide on the cutting board
How to tell it's doneYou can see white seeds in the cut sides, which are shaped like stars.
4
Toss with bonito flakes
- Put the okra in a bowl, add 2 tsp soy sauce and 1 bag of bonito flakes, and mix
- Taste it. If the flavor is weak, add 1/2 tsp soy sauce
- Serve
ReadyThe bonito flakes have soaked up the soy sauce and cling to all the okra.
