How to make it
1
Cut the ingredients into thin strips
- Cut the green peppers in half lengthwise and remove the stems and seeds with your hands. On the cutting board, cut lengthwise into 5 mm wide thin strips
- Drain the bamboo shoots. If some are thick, cut them to 5 mm wide on the cutting board
- Spread the beef on the cutting board and cut into 5 mm wide thin strips
How to tell it's doneThe green peppers, bamboo shoots and meat are all about the same thinness.
2
Season the meat
- In a bowl, put the meat, 1 tsp sake and 1 tsp soy sauce and rub in with your hands
- Add 1 tsp potato starch and rub in, then add 1 tsp vegetable oil last and mix (this keeps the meat from sticking together)
- Let sit like this for 5 minutes
How to tell it's doneYou can't see any powder on the meat, and it's all moist.
3
Mix the sauce
- In a small dish, mix 1 tbsp oyster sauce, 1 tsp soy sauce, 1 tbsp sake and 1/2 tsp sugar
How to tell it's doneNo sugar is left at the bottom. Keep it next to the stove.
4
Stir-fry the meat
- Put 1 tbsp vegetable oil in a frying pan and heat over medium heat
- Add the meat and stir-fry, separating it with cooking chopsticks
How to tell it's doneNo red parts are left on the meat, and it's all brown.
Be carefulRight after adding, the meat is stuck together, so spread and separate it with cooking chopsticks. If it stays in a clump, the inside stays red.
5
Add the vegetables and finish
- Add the green peppers and bamboo shoots and stir-fry for 1 minute
- Mix the sauce from step 3 again, then pour it in
- Mix everything in big motions, stir-fry for 30 seconds, and turn off the heat
ReadyThe green peppers are still bright green but a little soft, and everything is coated in shiny brown sauce.

The flavor is weakTaste before serving, and add soy sauce 1/2 tsp at a time.
