🥄 How to

1

Use a lid a little smaller than the pot

2

With foil or baking paper, cut it to the pot’s size and make a small hole in the center for steam

3

Place it right on top of the food and simmer

💡 Why use it

  • The liquid bubbles up over the top, so flavor reaches everything
  • Food moves less, so it doesn’t fall apart
  • The liquid doesn’t boil away too fast

⚠️ Be careful

  • It’s hot. Lift it with chopsticks or tongs
  • Make sure baking paper doesn’t hang over into the flame
